I’ve been growing herbs all summer and I’m loving them! Â Well…. after moving most of them outside… the basil however continues to do just perfectly indoors, the others are now outside thriving.

After many years of learning to speak Spanish -my sister introduced me to much of the culture. One of highlights she introduced to my family when I was a teen was Salsa and I’ve been obsessed with it ever since.
Last weekend I had my Godson (her grandson) in the kitchen with me. Â We made her some killer Pico de Gallo.

We started with some fresh cilantro, diced some beautiful tomatoes – which I vow to grow next summer…. and a generous amount of chopped onions (rinsed in water to temper that rawness a bit).

We then squeezed in some very vibrant lime juice… Â which took a lot of muscle! Â But was well worth it!

We added a generous sprinkling of salt and VOILA! Â Killer Pico de Gallo!

This was a super simple recipe and I hope you’ll try it.
My Killer Pico
3 cups of diced tomatoes
1 cup of chopped cilantro
1 cup of chopped onionsÂ
about 1/2 cup of freshly squeezed lime juice
Generous amount of salt to taste

Bottling Summer!
